Commercial Low Methoxy (LM) Pectin is largely composed of β (1,4)-linked galacturonic acid that has <40% of hydroxyl groups methyl esterified. LM Pectins gel with calcium ions and are used in food applications such as pastries and recipes designed not to be very sweet. Low methoxy pectin is used as a gelling agent, thickening agent and stabilizer, can be used as a fat substitute in baked goods and to stabilise acidic protein drinks such as drinking yogurt.
